Acai Bowl

The purple fur is not Grimace. It's my weighted blanket and where I happily enjoyed this acai bowl.
Ingredients: 
  • 1/2 frozen acai packet
  • 1 small or 1/2 large banana (frozen is best, but not necessary)
  • 3/4 cup frozen berries
  • milk of your choosing (about 1/2 cup, but use your judgment) 
  • Toppings! Nut butter, fresh berries, coconut, chocolate chips, granola - the sky's the limit
Directions: 
  • Put frozen acai, banana, berries, and milk into a strong blender or food processor and pulse until smooth
  • Put that yummy goodness in a bowl and add those toppings. My favorites are nut butter, strawberries, coconut, granola, and dark chocolate chips, but this is your world.

Easy Gluten Free Zucchini Brownies

2 cups all purpose gluten free flour (I like Bobs Red Mill)
1 ½ tsp. Baking soda
1 tsp salt
1 ½ cups sugar
¼ cup unsweetened applesauce OR one medium mashed banana
¼ cup melted coconut oil
2 tsp. Vanilla
¼ cup cocoa powder
2 cups shredded zucchini
1 cup vegan chocolate chips (I like Enjoy Life dark chocolate chips)
Extra chips for topping

Preheat oven to 350. 

Beat sugar, applesauce or banana, coconut oil, and vanilla until smooth. Mix dry ingredients in separate bowl and add to mixer. Beat  about 1 minute, until it resembles wet sand. Add shredded zucchini and cocoa powder and mix on low until combined. Stir in 1 cup of chocolate chips. 

Grease 9x11 baking dish with coconut oil. 

Pour batter into dish and top with extra chocolate chips. 

Bake for 30 minutes, then let cool. Enjoy!
